Ten to Go: Sweet potato brownies

Berkis Johnson, wife of our health guru Demond Johnson, knows a thing or two about fitness herself – she’s a winning National Physique Championship bikini model. One of her favoriet post-workout snacks, via bodybuilding.com, is a sweet potato brownie. Here’s the recipe:


  • 2 large sweet potatoes, skin removed
  • 1/2 cup quinoa flour or oat flour
  • 1 zucchini, grated (optional, but recommended for added moisture)
  • 1/2 cup cocoa powder
  • 1-1/2 tsp. baking powder
  • 2 eggs
  • 3 egg whites
  • 1/3 cup raw organic honey


Preheat oven to 415 degrees. Bake potatoes for approximately one hour, or until they’re soft. Allow to cool to room temperature. Preheat oven to 350. Mash sweet potatoes into a large mixing bowl. Add all remaining ingredients and mix thoroughly. Evenly divide batter into a muffin pan. Bake for 30 minutes, or until a toothpick inserted into brownies comes out clean.
